I had a county that was owned by a vassal and I got it off them but after that I got a warning that there was a 'wrong holding type' and I noticed that the city of the county was the capital not the castle. What you need to do is build a tribal holding in one of the subslots and turn that into the county capital and then give the castle away preferably to a random dude.
